Ingredients:
8 Talapia Fillets (You can substitute with the fish of your choice)
seasoning of choice
1 c. coleslaw
taco sauce
10 corn tortillas
olive oil
Instructions:
Cook fish either by frying or baking without batter, just using seasoning of choice. When done, place fish into a bowl and slightly break apart into smaller pieces.
Heat corn tortillas according to your routine method of choice. Add fish, coleslaw and taco sauce.
Plate and eat immediately.
Serves: 5

3 medium carrots
1 tsp. lemon juice (fresh or ReaLemon)
1/4 tsp. cinnamon
1/4 c. dried cranberries (Craisins)
2 Tbsp. cherry yogurt
Instructions:
Peel carrots and apple. Remove core from apple. Shred carrots and apple into large bowl. Add lemon juice and mix to coat well. This helps the apples not turn brown.
Add other ingredients into bowl and combine well. Place in refrigerator at least 1 hour before serving. If you have longer, that is best. Helps the flavors to marry together and give a nice flavor to your salad.
Serve on a bed of leaf lettuce or enjoy alone.

Tasty Tuesday Recipe #1: Frozen Yogurt Cones

Ingredients:
1 c. whipped cream
2 c. Dannon 80 calorie yogurt
1 c. frozen cherries or fruit of choice
8 Ice cream cones, regular
Instructions:
Combine whipped cream and yogurt together until well blended. Add desired amount of fruit and toss lightly. Reserve 8 cherries for topping with later.
Scoop into each cone and top with a piece of fruit. Place in freezer for at least 2 hrs. before devouring into them.
Warning: Once you have "ice cream" like this, you will find it your go-to "ice cream" from now on because it is so much healthier and tastes great too!

Yvonne has lost 5 pant sizes in the last 2 years
Yvonne has lost 5 pant sizes in the last 2 years and says:
"This is me, Yvonne O.!!! This is why I have you all take pictures when you start taking Skinny Fiber!!! You will need to drag out the pictures when you are feeling like you are having a fat day! I have lost 5 pant sizes in the last 2 years!!! Yay me!!! I heard the other day that a woman from my church couldn't see that I had lost weight. Well, I'm quite active in church and she probably sees me at least twice a week and that person probably doesn't see my before and afters!!! I do always gain some weight back each winter when I hibernate, so my weight does go up and down. Sounds normal, doesn't it??? Last winter I had a rough patch when I hurt my back and couldn't walk for exercise for half a year!!!! If I can do this, you can too!!! Do you see how my spine is straightening out??? All that weight was killing me!

"My journey with Skinny Fiber has just started. But let me take you back 4 years….
September 2010 I was put on prednisone for extreme eczema on my palms and fingertips. 80 mg/day for 8 weeks! I gained 40 pounds bringing my weight to 240 lbs! On the 9th week, my pancreas shut down. I was put in a medically induced coma for 3 weeks. To save my life, they pumped me with fluids, bringing me up to 360 pounds! Thankfully it was all liquid. Fast forward to February of 2014.…A friend who was a DT for Skinny Fiber asked if I knew anything about SF. I hadn’t heard of it. I decided to give it a whirl in March of 2013. By August of 2013, I had lost 25 lbs! Woohoo! Then I became hooked on it! I signed up as a DT in August.

Lemon Cheesecake Mousse (no bake)
*** This can be made with artificial sweetener ***
Ingredients:
8 oz. cream cheese (softened)
1/2 cup sugar ( or sweetener of choice)
1/4 cup confectioner's sugar (powdered)
1 tbsp finely grated lemon rind
1 to 2 tsp lemon juice
1 cup whipping cream
Topping:
1/4 cup almond flour
1 tbsp confectioner's sugar (powdered)
1 tbsp melted butter
In a food processor or blender:
Combine cream cheese, sweetener, lemon rind and lemon juice until smooth.
In another bowl:
Whip cream until stiff peaks form. Fold into cream cheese mixture.
Topping:
In frying pan, over medium heat, toast almond flour until turning golden (keep stirring as this can happen very quickly. Stir in sweetener and butter.
Place mixture into glasses. Garnish by sprinkling topping on each glass. Refrigerate until serving. ENJOY!
