Chocolate Coconut Flour Cupcakes with Chocolate Buttercream

Chocolate Coconut Flour Cupcakes with Chocolate Buttercream ♥

Chocolate Coconut Flour Cupcakes

Ingredients:
1/4 cup butter
3 tbsp cocoa powder
1/3 cup coconut flour
1/2 tsp baking powder
1/2 tsp baking soda
3 tbsp granulated erythritol
1/4 tsp salt
4 eggs
12 drops stevia extract
1/2 tsp vanilla extract
1/3 cup almond milk

Directions:
1)Preheat oven to 350F and line 7 muffin tins with paper liners.
2)In a small bowl, mix together coconut flour, baking soda, baking powder, erythritol and salt. Make sure you break up any clumps.
In a larger bowl, beat the eggs with vanilla and stevia until frothy with an electric mixer. 
3)In a small saucepan, melt butter over low heat. Whisk in cocoa and mix well. 
4)Add butter/cocoa mixture to eggs and use the mixer to mix again until combined. 
5)Add half of coconut flour mixture and mix on low for a few moments.
6) Add the almond milk and mix in thoroughly. 
7)Add the remaining coconut flour mixture and mix on low, then use a rubber spatula to stir and make sure all ingredients are well combined and clump free!
8)Divide batter into the 7 muffin tins and bake in center of oven for 18-20 minutes. 
9) Cupcakes are done when you put toothpick in middle and it comes out clean.
10) Set aside and cool completely.

Chocolate Buttercream Frosting

Ingredients:
1/3 cup whipping cream
2 oz softened cream cheese
2 tbsp softened butter
2 tbsp unsweetened cocoa powder
10 drops stevia extract 
1 oz melted unsweetened chocolate

Directions:
1)Whip cream with an electric mixer until it forms stiff peaks and set aside.
2)In a separate bowl, beat cream cheese and butter together until smooth.
3)Beat in cocoa powder and stevia.
4)Slowly fold in the whipped cream and stir until combined. 
5)Pour melted chocolate into bowl and mix with a rubber spatula until it is combined and mixture is smooth.
6)Spread buttercream on your cooled cupcakes and ENJOY!!
*Tip: if you are not used to low carb foods you can play around with the amount of cocao powder and liquid stevia used in both the cupcake and the frosting to sweeten it up.

Greek Quinoa Salad

GREEK QUINOA SALAD
2 cups cooked quinoa
1/2 english cucumber chopped
1/2 cup grape tomatoes
1 green pepper chopped
1/4 cup chopped onion (white or red)
1/2 c black olives (chopped or whole)
1/2 cup feta cheese (can use mozzarella or cream cheese)
1 tsp minced garlic
1 tsp oregano
Mix all together then add about 3/4 cup of your favourite greek salad dressing (bottled) or make your own.
Recipe for homemade dressing
Dressing:
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 cup red wine vinegar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup olive oil
Chill for a few hours or overnight to let flavors blend...Enjoy!

Definitely been a whirlwind ride!!

The first photo was taken in January at the start of our very own New Year's 90 Day Challenge. Easy No-Bake Granola Bars

Easy No-Bake Granola Bars
Ingredients
2 cups quick cooking oats
1 C rice crispy cereal
1/4 C shredded coconut
1/4 C coconut Oil
1/4 C agave
1/2 C coconut palm sugar
1/2 tsp salt
1/3 C of white chocolate chips
1/3 C of Craisins
Instructions
1. In a large mixing bowl, mix together the oats, cereal and coconut, white choc chips and craisins. Set a small saucepan over medium high heat and melt the coconut oil . Add the agave, coconut palm sugar and salt. Stir together then leave it alone as it comes to a boil. Once the boil has reached all the way around the edges of the pan, begin timing. Allow this mixture to boil for 2 minutes and 15 seconds. During this time, you may need to turn the heat down a bit so it doesn't overflow, but be sure it keeps boiling.


2. Pour the mixture over the oats, using a rubber spatula to get all the sugar mixture out of the pan. Mix the ingredients together until the oats are completely coated. Press firmly into a 9×13″ pan line it with parchment paper . Make sure you press firmly, If you do not press firmly enough, the bars will fall apart when you eat them. Place them in the fridge for 20 minutes then cut to size. Wrap each one in saran wrap if you are going to use them for lunches.

So here is my testimony, after being in a very unhealthy marriage for 7 years, I gained 70 lbs in little over a year, which in turn lowered my self esteem, I wasn't happy with how I looked, how I felt, suffered depression and anxiety. March 2015 Workout Challenge

Spinach and Cheese Stuffed Meatloaf Recipe

Spinach and Cheese Stuffed Meatloaf

Ingredients:
1- 2 lbs of ground beef or turkey (adjust amount for your family size)
½ cup to ¾ cup of Italian bread crumbs
1 egg
½ tsp Morton’s Nature Season seasoning mix
1 small onion diced
1 tsp minced garlic (optional)
2 tsp Italian Seasoning
1 package chopped spinach (10 oz, thawed and drained)
½ c mozzarella cheese (any flavor that you like)
Ketchup
Small can of sliced mushrooms (optional)

Instructions:
Pre-heat oven 350.
Mix ground beef (turkey) with bread crumbs, egg, nature season, onion, garlic, and 1 tsp of the Italian Seasoning. Make sure its well mixed. Put aside.
Another bowl mix the spinach, cheese and 1 tsp of Italian seasoning till well mixed.
Split your meat mixture in half. Put half the meat in your loaf pan. Then take the spinach mix and put on top in the center. Put the rest of the meat mixture on top.
Bake for 45 minutes. When done pull out of the over and spread ketchup on top. If you like top with the mushrooms (optional). Put back in oven for 15 more minutes.

Healthy Low Carb Grilled Cheese

Healthy Low Carb Grilled Cheese smile emoticon
Bun Ingredients:
2 Large Eggs
2 Tbsp Raw Almond Flour
1/2 Tsp Baking Powder
2 Tbsp Soft/Melted Pure Irish Butter (or butter of choice)
1 1/2 Tbsp Psyllium Husk Powder
Fillings/cooking:
1 Tbsp Unsalted Pure Irish Butter (butter of choice for frying)
1 Slice Sharp Cheddar Cheese Slice (or cheese of choice
Directions:
Mix all of the bun ingredients in a square microwave safe dish until mixed smoothly.
Put the dish in the microwave for roughly 90 seconds. If not fully cooked then continue cooking at 15 second intervals until bread like.
Cut it in half so that you have 2 square slices.
Heat the frying pan and cook just like you would a grilled cheese made with regular bread.
Nutrition facts:
Calories 665, Total Fat 57 g, Total Carbohydrate 23 g, Dietary Fiber 22 g, Sugars 1 g, Protein 20 g. Net Carb: 1
Though this may seem high in calories, when following a low carb (net carb) "diet", calories are not counted. This may seem odd to many but I eat way more calories now and am losing weight faster than when I counted calories and ate high carb like most people do.

Ingredients:
350 g Broccoli
1/2 c Red Onion
1 c Celery
1/2 c Bacon pieces crushed up
1/4 c Sunflower Seeds
1/2 c Raisins
Dressing:
1 c Mayo
1/2 c Sugar
2 Tbsp. Apple Cider Vinegar
Directions:
Mix together your salad then add dressing just before serving

Veggie Pizza Recipe

Ingredients:

2 pkgs reduced fat crescent rolls
2 pkgs reduced fat cream cheese
1 packet hidden valley ranch dry dip mix
Veggies to suit you.
Shredded Cheddar cheese

Directions: 

Unroll crescent rolls onto a cookie sheet and bake according to directions on package.
In a bowl combine softened cream cheese and half the pack of hidden valley ranch and set aside. 
Chop all veggies and add to shredded cheese.
Once the dough is cooled, spread on cream cheese mixture and top with veggies.

"Well here I am…My 1st year update!! The time just flew by!!! I started SF on Feb 2, 2014 after being invited to a support group from a childhood friend. I never imagined how it would change my life for the better!
