Chocolate Coconut Flour Cupcakes with Chocolate Buttercream ♥

Chocolate Coconut Flour Cupcakes

Ingredients:
1/4 cup butter
3 tbsp cocoa powder
1/3 cup coconut flour
1/2 tsp baking powder
1/2 tsp baking soda
3 tbsp granulated erythritol
1/4 tsp salt
4 eggs
12 drops stevia extract
1/2 tsp vanilla extract
1/3 cup almond milk

Directions:
1)Preheat oven to 350F and line 7 muffin tins with paper liners.
2)In a small bowl, mix together coconut flour, baking soda, baking powder, erythritol and salt. Make sure you break up any clumps.
In a larger bowl, beat the eggs with vanilla and stevia until frothy with an electric mixer. 
3)In a small saucepan, melt butter over low heat. Whisk in cocoa and mix well. 
4)Add butter/cocoa mixture to eggs and use the mixer to mix again until combined. 
5)Add half of coconut flour mixture and mix on low for a few moments.
6) Add the almond milk and mix in thoroughly. 
7)Add the remaining coconut flour mixture and mix on low, then use a rubber spatula to stir and make sure all ingredients are well combined and clump free!
8)Divide batter into the 7 muffin tins and bake in center of oven for 18-20 minutes. 
9) Cupcakes are done when you put toothpick in middle and it comes out clean.
10) Set aside and cool completely.

Chocolate Buttercream Frosting

Ingredients:
1/3 cup whipping cream
2 oz softened cream cheese
2 tbsp softened butter
2 tbsp unsweetened cocoa powder
10 drops stevia extract 
1 oz melted unsweetened chocolate

Directions:
1)Whip cream with an electric mixer until it forms stiff peaks and set aside.
2)In a separate bowl, beat cream cheese and butter together until smooth.
3)Beat in cocoa powder and stevia.
4)Slowly fold in the whipped cream and stir until combined. 
5)Pour melted chocolate into bowl and mix with a rubber spatula until it is combined and mixture is smooth.
6)Spread buttercream on your cooled cupcakes and ENJOY!!
*Tip: if you are not used to low carb foods you can play around with the amount of cocao powder and liquid stevia used in both the cupcake and the frosting to sweeten it up.
