LIGHT LEMON CAKE
Ingredients:
1 angel food cake - make or buy one
1 pkg of lemon pie filling
1 cup whipping cream
Fruit of your choice
Directions:
Prepare lemon pie filling as directed and let cool. Slice cake in half and spread about 1/3 to 1/2 lemon filling over the bottom layer. Put cake back together.
Whip up the whipping cream and sweeten if desired (I used 1 tsp stevia in the raw)
Mix whipping cream into the remaining pie filling and blend well.
Spread over the cake.
Decorate with fresh fruit as desired.
Enjoy!
