Peanut Butter Pancakes

Peanut Butter Pancakes 

2 Servings

Ingredients:
4 Tbsp Heavy Cream 
4 Tbsp Ground Flaxseed
2 Large Eggs 
1/2 Tsp Baking Powder
2 Tbsp Dry Peanut Butter
1 Tbsp Kerrygold Butter 
2 Tbsp Sugar Free Maple Syrup

Directions:
Put all the ingredients in a dish and mix. Preheat the pan so that it is hot and use the butter to lightly grease the pan while cooking. Cook until bubbles appear throughout then flip and let sit for a minute on the other side.
NOTE: They will not be as fluffy as a usual pancake but oh so good! Top with a little butter and syrup and enjoy! I like to sprinkle some ground cinnamon on top to give it more flavor!

My name is Teresa and I began my Skinny Fiber journey on August 26th, 2013. I weighed in at 207lbs. I was so miserable. 7-DAY DIET WEIGHT LOSS SOUP (WONDER SOUP!)

INGREDIENTS
½ head of cabbage, chopped
1 cup celery, diced
1 cup white or yellow onion, diced
1 cup carrots, diced
1 green bell pepper, diced
2-3 cloves garlic, minced
4 cups chicken broth
14 oz can diced tomatoes
1 teaspoon oregano
1 teaspoon basil
½ teaspoon red pepper flakes
and cayenne pepper
Salt and Pepper to taste

INSTRUCTIONS
Heat 2-3 tablespoons of olive oil in a large pot over medium heat.
Add celery, onions, bell peppers, and carrots.
Saute until slightly tender.
Stir in garlic.
Pour in chicken broth.
Stir in tomatoes and cabbage.
Bring to a boil and then reduce heat.
Cook until cabbage is tender.
Stir in oregano, basil, red pepper flakes, black pepper and salt (if using)
Taste broth and adjust seasoning if needed.

This diet should only be followed for 7 days at a time, with at least two weeks in between.
Day One:
Fruit: Eat all of the fruit you want (except bananas). Eat only your soup and the fruit for the first day. For drinks- unsweetened teas, cranberry juice and water.
Day Two:
Vegetables: Eat until you are stuffed will all fresh, raw or cooked vegetables of your choice. Try to eat leafy green vegetables and stay away from dry beans, peas and corn. Eat all the vegetables you want along with your soup. At dinner, reward yourself with a big baked potato with butter. Do not eat fruit today.
Day Three:
Mix Days One and Two: Eat all the soup, fruits and vegetables you want. No Baked Potato.
Day Four:
Bananas and Skim Milk: Eat as many as eight bananas and drink as many glasses of skim milk as you would like on this day, along with your soup. This day is supposed to lessen your desire for sweets.
Day Five:
Beef And Tomatoes: Ten to twenty ounces of beef and up to six fresh tomatoes. Drink at least 6 to 8 glasses of water this day to wash the uric acid from your body. Eat your soup at least once this day. You may eat broiled or baked chicken instead of beef (but absolutely no skin-on chicken). If you prefer, you can substitute broiled fish for beef on one of the beef days (but not both).
Day Six:
Beef and Vegetables: Eat to your heart’s content of beef and vegetables this day. You can even have 2 or 3 steaks if you like, with leafy green vegetables. No Baked Potato. Eat your soup at least once.
Day Seven:
Brown rice, unsweetened fruit juices and vegetables: Again stuff, stuff, stuff yourself. Be sure to eat your soup at least once this day.
Day 8 and Beyond:
The Cabbage Soup Diet is not suitable for long-term weight loss. The Diet is a low-fat, high-fiber diet that will help you get into shape fast before you embark on a more moderate long-term eating plan. Many struggle in long-term plans due to lack of willpower.

Tomato Tortellini Soup

Tomato Tortellini Soup
Ingredients:
2 x 950mL cartons vegetable broth (reduced salt)
10 -12 cups water
1 can herb and spice tomato paste
1 honey onion, diced
4 stalks celery, diced
2 tsp dried basil
2 tsp dried oregano
1 tsp sea salt
2 tsp ground black pepper
2 tsp paprika
2 cups frozen vegetables of your choice
1 cup butternut squash, diced
1 large package frozen tortellini
2 Tbs chicken soup base
Directions:
Bring all ingredients except the squash, tortellini and soup base to a boil, lower heat to medium and gently boil for 30 minutes. Add squash and tortellini and more water if needed, cook for another 20-25 minutes. Stir in soup base and continue cooking for another 5 minutes. Enjoy!

"My name is Colleen and here are the photos of my 90 Day Skinny Fiber Challenge. (Sorry for the blurry one...my kid took it!)
In 2006, when I was 46 yrs. old, we found out that I was pregnant...again...this would be my 5th child...and yes it was a surprise. We had had 4 children in the 80's and the youngest of that batch was now 18 and ready to graduate high school.

"I have been horribly overweight all my life. Plagued w/embarrassment, low self-esteem, chronic sinus headaches & debilitating migraines and self-deprecation. In the last 10 years it has become about disability, depression and pain. I've done the diet, lost over 70 lbs 1 time, plateau, frustration, all a vicious cycle. I learned to accept the fact I may never lose this weight or get healthy again.

My health took a downswing after a fall in 2003. Major problems w/the knee, rupture of the hamstring, shredded rotator cuff just in that fall was followed by arthritis, further depression, chronic migraines, carpal tunnel, fibromyalgia and more. By 2010 diabetes was added to the list.

Banana Muffins

Banana Muffins - 24 small muffins (1/4 cup batter for each muffin)

Ingredients
1 2/3 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/4 cup ground flaxseed
1/2 cup applesauce 
1/2 cup coconut sugar
1 egg
1/4 cup greek yogurt
3 mashed bananas 
1/2 cup chocolate chips

Directions
1. Stir flour, baking soda, baking powder and ground flaxseed
2. In second bowl mix together apple sauce, coconut sugar and egg
3. Add yogurt and banana
4. Mix dry ingredients with wet 
5. Add chocolate chips
Bake at 350 for 13 to 18 minutes, until toothpick comes clean

Chicken Veggie Soup

Chicken Veggie Soup 

Servings 2-3

Ingredients:
1 chicken breast diced (I used a left over grilled chicken breast and cut in into pieces)
1 - 14 oz can of fat-free low sodium chicken broth
1/4 c white cooking wine
1 c green beans 
1/2 cup chopped cabbage
1 celery stalk chopped
1/2 white onion diced
1/2 c diced broccoli
1/2 c frozen spinach
1 - 10 oz can rotel tomatoes
garlic powder to taste
seasoning salt to taste
black pepper to taste

Directions:
Dump everything in a pan and bring to a boil. Turn heat down and simmer for 15-20 minutes. 
That's it! Serve and ENJOY!

Sweet Potato Bites ( Low Carb- Gluten Free)

Ingredients:
1 pound sweet potatoes (sliced to 1/4 inch thick)
4 Tbsps. olive oil ( more if needed)
salt and pepper
3/4 cup of shredded mild cheddar
6 slices cooked, chopped bacon 
1/2 cup sour cream
2 Tbsps. chopped chives

Directions:
Preheat oven to 400 degrees F. In a large bowl mix together sweet potatoes, olive oil, salt and pepper to taste. Mix until coated well. Place on rimmed baking pan and bake for 25 minutes. Top each slice with cheese , bacon, sour cream, and chives.

This (pink jacket) was me March 18th, 2013. The last two were taken the end of February (black shirt) and end of March (middle).
I am not actually trying to push/sell the Skinny Fiber. I am just very proud of myself and honestly just don't think I would have lost about 80lbs in a year without the SF.

I was not even recognized when I went to dinner the other evening and this lady has known me a while. This prompted me to look at my before and after photos. I was amazed. I actually cried. I guess I haven't really grasped the change. I get so many compliments, but I thought people were just being nice. Bourbon Chicken

Bourbon Chicken (YUMMY)

Ingredients:
4 chicken breasts
1/2 teaspoon minced garlic
1/4 cup apple juice
1/2 cup brown sugar
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon cornstarch

Directions:
Cut chicken in small chunks and fry until cooked through (I use olive oil).
Drain any excess grease from frying pan.
In a bowl, mix together garlic, apple juice, brown sugar, ketchup, apple cider vinegar, water, soy sauce, and cornstarch. Whisk together till cornstarch is fully dissolved.
Add sauce to skillet with chicken. Stir to coat chicken. Reduce heat to simmer. Cover and simmer for 10 minutes.
Serve over white rice, noodles or on hoagie bun.

Serves 6

Seasoned Green Beans and Asparagus

Seasoned Green Beans and Asparagus

What you will need is:
fresh asparagus
fresh green beans 
basil
lemon juice
olive oil
salt and pepper 

Directions
In a big frying pan heat olive oil, add your asparagus and beans, season well with salt and pepper, saute for about 3 min stirring often, add basil and lemon juice stir well to coat and saute for another 3 min. They should be hot but still crispy.
Enjoy!

Baked Beef 'n Bean Wraps

Baked Beef 'n Bean Wraps

Ingredients
2 lbs ground beef, browned
1 Tbs extra virgin olive oil
2 cans six bean blend
1 bunch green onions, chopped
1 jar Newman's Own Black Bean & Corn Salsa
1 heaping Tbs homemade taco seasoning
1 bag Tex Mex shredded cheese
16 >10" whole wheat tortillas

Directions
Preheat oven to 400F. In a large frying pan add the oil, browned ground beef, beans, onions, salsa and seasoning... blend well and cook over medium heat for 20 minutes... stir often to prevent sticking. Remove from heat and add cheese... stir. Scoop mixture onto tortillas (3-4 Tbs), fold in sides and roll to wrap... do not overfill. Cover a large cookie sheet with parchment paper. Place wraps, seam side down on parchment and brush a little olive oil on wraps...bake for 25-30 minutes (turn over half way through baking). Remove and serve with Greek yogurt, sour cream, guacamole or salsa. Enjoy!
