Tomato Tortellini Soup
Tomato Tortellini Soup
Ingredients:
2 x 950mL cartons vegetable broth (reduced salt)
10 -12 cups water
1 can herb and spice tomato paste
1 honey onion, diced
4 stalks celery, diced
2 tsp dried basil
2 tsp dried oregano
1 tsp sea salt
2 tsp ground black pepper
2 tsp paprika
2 cups frozen vegetables of your choice
1 cup butternut squash, diced
1 large package frozen tortellini
2 Tbs chicken soup base
2 x 950mL cartons vegetable broth (reduced salt)

Colleen shared her story.
"My name is Colleen and here are the photos of my 90 Day Skinny Fiber Challenge. (Sorry for the blurry one...my kid took it!)
In 2006, when I was 46 yrs. old, we found out that I was pregnant...again...this would be my 5th child...and yes it was a surprise. We had had 4 children in the 80's and the youngest of that batch was now 18 and ready to graduate high school.
So to say the least...being pregnant and OLD after having our precious baby boy, it was hard to lose the weight. For eight years I just couldn't lose the weight. Then I watched a friend of mine from church and saw her losing her weight and I saw on FB that she was posting testimonies of others who were losing the weight. I watched her for a year! Then decided to ask her about it. I started Skinny Fiber in Sept 2014 and weighed 178 lbs. Little by little the pounds started coming off and by the end of December and even going thru the holidays I lost 14 lbs and now weigh 164 lbs. But not only the weight was coming off, but I noticed other things happening in my body. My energy was back! I could now go throughout the day without having to lay down to make it to the end of the day...I mean I am 55 now and chasing after an 8 yr. old....I need that energy!!! And the Acid Reflux problems I developed during that last pregnancy were disappearing. My carb cravings were gone and I never get hungry thru the day. Many days I skip lunch just because I'm not hungry and don't think about eating! Now I'm sure that if I would EXERCISE....I hate that word!...that I would lose more, faster...but I'm a really busy woman and I just like to walk a few days a week. So....I love Skinny Fiber!"

"I have been horribly overweight all my life. Plagued w/embarrassment, low self-esteem, chronic sinus headaches & debilitating migraines and self-deprecation. In the last 10 years it has become about disability, depression and pain. I've done the diet, lost over 70 lbs 1 time, plateau, frustration, all a vicious cycle. I learned to accept the fact I may never lose this weight or get healthy again.
My health took a downswing after a fall in 2003. Major problems w/the knee, rupture of the hamstring, shredded rotator cuff just in that fall was followed by arthritis, further depression, chronic migraines, carpal tunnel, fibromyalgia and more. By 2010 diabetes was added to the list.
March 2014 a FB page @ "Skinny Fiber" intrigued me. Some of the testimonies piqued my interest. I began to investigate. October 2014 I made the decision to accept their "90 day challenge." FF to today, Jan 30, 2015, official figures:
29.5 INCHES AND 11 lbs. 😋😎
SO PSYCHED about the inches off and feeling awesome!!!! Already off most of my drugs, my sugar hasn't gone over 100 in over 3 weeks. I've had only 1 migraine since I started on SF when I'm used having several a month. I can't tell you how wonderful it feels to lose the bonds of prescription meds & their side effects. Banana Muffins
Banana Muffins - 24 small muffins (1/4 cup batter for each muffin)
Ingredients
1 2/3 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/4 cup ground flaxseed
1/2 cup applesauce
1/2 cup coconut sugar
1 egg
1/4 cup greek yogurt
3 mashed bananas
1/2 cup chocolate chips
Directions
1. Stir flour, baking soda, baking powder and ground flaxseed
2. In second bowl mix together apple sauce, coconut sugar and egg
3. Add yogurt and banana
4. Mix dry ingredients with wet
5. Add chocolate chips
Bake at 350 for 13 to 18 minutes, until toothpick comes clean

1 - 14 oz can of fat-free low sodium chicken broth
1/4 c white cooking wine
1 c green beans
1/2 cup chopped cabbage
1 celery stalk chopped
1/2 white onion diced
1/2 c diced broccoli
1/2 c frozen spinach
1 - 10 oz can rotel tomatoes
garlic powder to taste
seasoning salt to taste
black pepper to taste
Directions:
Dump everything in a pan and bring to a boil. Turn heat down and simmer for 15-20 minutes.
That's it! Serve and ENJOY!

Sweet Potato Bites ( Low Carb- Gluten Free)
Ingredients:
1 pound sweet potatoes (sliced to 1/4 inch thick)
4 Tbsps. olive oil ( more if needed)
salt and pepper
3/4 cup of shredded mild cheddar
6 slices cooked, chopped bacon
1/2 cup sour cream
2 Tbsps. chopped chives
Directions:
Preheat oven to 400 degrees F. In a large bowl mix together sweet potatoes, olive oil, salt and pepper to taste. Mix until coated well. Place on rimmed baking pan and bake for 25 minutes. Top each slice with cheese , bacon, sour cream, and chives.

This (pink jacket) was me March 18th, 2013. The last two were taken the end of February (black shirt) and end of March (middle).
I am not actually trying to push/sell the Skinny Fiber. I am just very proud of myself and honestly just don't think I would have lost about 80lbs in a year without the SF.
I was not even recognized when I went to dinner the other evening and this lady has known me a while. This prompted me to look at my before and after photos. I was amazed. I actually cried. I guess I haven't really grasped the change. I get so many compliments, but I thought people were just being nice. I knew I was losing weight and I deserved their compliments, but I had no idea I was doing THIS good. And STILL GOING!! It feels great!!!!

Bourbon Chicken
Bourbon Chicken (YUMMY)
Ingredients:
4 chicken breasts
1/2 teaspoon minced garlic
1/4 cup apple juice
1/2 cup brown sugar
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon cornstarch
Directions:
Cut chicken in small chunks and fry until cooked through (I use olive oil).
Drain any excess grease from frying pan.
In a bowl, mix together garlic, apple juice, brown sugar, ketchup, apple cider vinegar, water, soy sauce, and cornstarch. Whisk together till cornstarch is fully dissolved.
Add sauce to skillet with chicken. Stir to coat chicken. Reduce heat to simmer. Cover and simmer for 10 minutes.
Serve over white rice, noodles or on hoagie bun.
Serves 6

Seasoned Green Beans and Asparagus
Seasoned Green Beans and Asparagus
What you will need is:
fresh asparagus
fresh green beans
basil
lemon juice
olive oil
salt and pepper
Directions
In a big frying pan heat olive oil, add your asparagus and beans, season well with salt and pepper, saute for about 3 min stirring often, add basil and lemon juice stir well to coat and saute for another 3 min. They should be hot but still crispy.
Enjoy!

~"Top left is 52 days ago, the day I started Skinny Fiber...bottom left is approx. 21 days ago... Right in green shirt is today! 18 pounds down and countless inches GONE FOR GOOD!! I promise the full body pics will be coming... Just teasing you all with a sneak peak! I LOVE SKINNY FIBER!!!
I was truly unhealthy 52 days ago, suffered from horrible inflammation and arthritis in my entire lower half...IBS..the whole kit and kaboodle!! I am now completely rid of all the inflammation, my joints feel 85% better and the IBS has vanished!!! I still have 82 pounds to go...but I'm thrilled!!!!! I also am so happy!"

Baked Beef 'n Bean Wraps
Baked Beef 'n Bean Wraps
Ingredients
2 lbs ground beef, browned
1 Tbs extra virgin olive oil
2 cans six bean blend
1 bunch green onions, chopped
1 jar Newman's Own Black Bean & Corn Salsa
1 heaping Tbs homemade taco seasoning
1 bag Tex Mex shredded cheese
16 >10" whole wheat tortillas
Directions
Preheat oven to 400F. In a large frying pan add the oil, browned ground beef, beans, onions, salsa and seasoning... blend well and cook over medium heat for 20 minutes... stir often to prevent sticking. Remove from heat and add cheese... stir. Scoop mixture onto tortillas (3-4 Tbs), fold in sides and roll to wrap... do not overfill. Cover a large cookie sheet with parchment paper. Place wraps, seam side down on parchment and brush a little olive oil on wraps...bake for 25-30 minutes (turn over half way through baking). Remove and serve with Greek yogurt, sour cream, guacamole or salsa. Enjoy!

Lindsay didn't exercise and lost 18 pounds in 90 days

"This is such a hard picture for me to post so please no bashing. I reached my peak weight after my baby Kiersten was born in May of 2013. I tried diets, I tried low carb I even tried different diet pills. Either I couldn't stick to it or it just didn't work. I didn't really exercise but I clean houses during the day and chase my kids at night so by the time they were in bed I didn't have the energy to exercise. I was getting so depressed with the way I looked and my weight. Then in the beginning of September 2014 I went for my annual blood work. My cholesterol was through the roof and that scared me. My Dr pretty much told me either start skinny fiber or start cholesterol medicine. He told me skinny fiber was safe and all natural so I wouldn't get the jitters and feel like I was speeding and dizzy all the tome like it did with other fad diet pills and said losing weight will help my cholesterol and over all health. I started skinny fiber on September 16th. I feel better and I look better I still have a ways to go but in this 90 day period I didn't exercise other than my normal daily activity. I went from tipping the scales at 192 to 170! I finally found a product that not only works but is safe to take and isn't full of harsh chemicals and stimulants!! The pills expand to 50 times their size so by the tome I take them and cook I am not really hungry and I eat half of what I normally would!!
