Bourbon Chicken

Bourbon Chicken (YUMMY)

Ingredients:
4 chicken breasts
1/2 teaspoon minced garlic
1/4 cup apple juice
1/2 cup brown sugar
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon cornstarch

Directions:
Cut chicken in small chunks and fry until cooked through (I use olive oil).
Drain any excess grease from frying pan.
In a bowl, mix together garlic, apple juice, brown sugar, ketchup, apple cider vinegar, water, soy sauce, and cornstarch. Whisk together till cornstarch is fully dissolved.
Add sauce to skillet with chicken. Stir to coat chicken. Reduce heat to simmer. Cover and simmer for 10 minutes.
Serve over white rice, noodles or on hoagie bun.

Seasoned Green Beans and Asparagus

Seasoned Green Beans and Asparagus

What you will need is:
fresh asparagus
fresh green beans 
basil
lemon juice
olive oil
salt and pepper 

Directions
In a big frying pan heat olive oil, add your asparagus and beans, season well with salt and pepper, saute for about 3 min stirring often, add basil and lemon juice stir well to coat and saute for another 3 min. They should be hot but still crispy.

Baked Beef 'n Bean Wraps

Baked Beef 'n Bean Wraps

Ingredients
2 lbs ground beef, browned
1 Tbs extra virgin olive oil
2 cans six bean blend
1 bunch green onions, chopped
1 jar Newman's Own Black Bean & Corn Salsa
1 heaping Tbs homemade taco seasoning
1 bag Tex Mex shredded cheese
16 >10" whole wheat tortillas

Directions
Preheat oven to 400F. In a large frying pan add the oil, browned ground beef, beans, onions, salsa and seasoning... blend well and cook over medium heat for 20 minutes... stir often to prevent sticking. Remove from heat and add cheese... stir. Scoop mixture onto tortillas (3-4 Tbs), fold in sides and roll to wrap... do not overfill. Cover a large cookie sheet with parchment paper. Place wraps, seam side down on parchment and brush a little olive oil on wraps...bake for 25-30 minutes (turn over half way through baking). Remove and serve with Greek yogurt, sour cream, guacamole or salsa. Enjoy!

Happy New Year. I completed my first 90-day challenge! As you'll read in my testimony below I didn't set any records, but I'm back in a weight losing mode again. Lessons learned. I'm including my testimony and pictures; you can use them as you want.
When my husband and I married over 39 years ago, I was a skinny size 9 at 125 pounds. I had lost 35 pounds to achieve that. Didn't stay there long...The top point came around our 38th anniversary when I peaked at 284 lbs. whoops! My husband received over twice the wife he bargained for..(and not in a good way either)!
My health was failing and I had a long list of obesity related conditions, including Diabetes. When I went to the doctor my diabetes was out of control in the upper 300's, I felt like crap, my fibromyalgia was flaring and my clinical depression had dumped my desire to live into the gutter. I was addicted to Popsicles....eating a box of six fruit Popsicles at a time was normal behavior! Daily. Lots of bad habits, bad effects and not much happiness...bad way to exist.
Well, the doctor adjusted my meds and I quit Popsicles by just not replacing the last box. That brought me down to 266 lbs. This is when I started seeing lots of before and after weight loss photos, all associated with Skinny Fiber. It started to look good, and I thought to myself "I want to try that!.." Meanwhile a warm, caring message showed up on my IM in response to a friend request. After some discussions over about 6 weeks, I decided to become a customer of distributor Nancy the wonderful, caring person who'd answered my friend request!
Starting an intentional, life-changing path right around the autumn and following holidays was OK....until the holiday meals rolled around. Nature did its thing; you know....calories in, weight on! I bounced from my low of 249 to 262. Oh phooey. My body was toxic again....but the New Year brought another downward trend. I end this 90 day challenge, down 11 pounds and have gone from a tightly packed 3X to loose 3X's and in some 2X's. While the results aren't prize-winning, I see many good things: the Holidays, and all those feasts are over and I am on a solid downward trend. I notice that I am in a low-blood sugar state between 45 and 70 almost daily. Have another doctor appointment soon; I hope there will be reducing meds!! My emotional, mental and spiritual state are MUCH improved. I'd say I am in a good position for the next 90-day challenge. Bring it on!!!"

"I HATE posting this pic! LOL I've actually lost a total of 165 lbs now and I'm in a 5/6. Quite happy where I'm at... although I NEED to work on toning up this body and getting rid of this belly! My life is here, there, and everywhere right now so I'm just trying to make peace with what I see in the mirror! It's been 19 months since I began this journey. I've got to admit that it's all so mind-blowing to think of where I was and where I'm at now. My brother Jim has been gone 3 yrs this coming March. If I could have just ONE more day with him, I'd spend it thanking him, talking with him, laughing with him.... If it wasn't for Jim I wouldn't be here. As I've said before, “In his death I've found Life”.... Thanks goes out to my family and friends for being here for me, for picking me up when I was down.... for BELIEVING in me!! There have been Many changes in my life all the way around.... I'm a very blessed Girl to have the love of those around me. I will NEVER take life for granted again! So below you will read my original story....
Here is my final updated pic and my story. I've put this off for awhile now because of me not wanting to post this pic of me from August 2013. This was me at my heaviest. I seriously don't even remember who that woman was! I'm so beyond HAPPY with the Girl on the right! LOL I DID THIS! I've lost 145 lbs! That is like an entire person! So am I done with the weight loss? Yes! I've actually went past my goal which was to be in a 9/10 and am now in a size 7/8. I'm working on maintaining my weight where I'm at! I am so excited for each of you that is on your own journey! Hang on coz I'm tellin' ya it's a trip! YOU CAN DO THIS!!!
I'm Missie, This pic is of me. My final before and after. The pic on the left is me in August of 2013. The one on the right is me now, April 2014. Who is that Girl on the left? Does the pain look familiar? Even though I was already heavy this was the beginning of the end for me. One of the worst days of my life was March 7th of 2012. My brother was gone. I was left here to go on and pick up the pieces. Trust me it hasn't been easy! I'm still dealing with issues. I made a promise to my brother Jim before he died. He asked me to get healthy. He made me PROMISE him I'd lose weight and get healthy! Another year went by and I got worse.. Yep! My health went totally down hill. I didn't want to be here. I didn't care! I had never felt so alone in all of my life. When I say I've been through it, I've BEEN THROUGH IT! I buried my Baby Boy and my Mama six weeks apart, a set of twins, then my Daddy. Every time I buried a parent, I lost my babies.. Then my sister skipped out on me in 2008 from an eating disorder. She pretty much starved herself to death. So I buried her and her husband eleven weeks apart. Then my Bubba..Jim. He was my lifeline... I never realized just how much till he was gone. How was I gonna do this without him?! I didn't even want to be here! Fast forward to June of 2013. I had just had a breast cancer scare but the biopsy came back fine. But I wasn't FINE! I was a mess! Stroke level blood pressure, out of control Diabetes, irritable bowel, Fibro, You name it! I was taking two handfuls of meds a day. I hadn't even turned 50 yet. My Doc leveled with me, told me I was gonna die. He said I was mourning myself to death and if I didn't get a grip I'd be dead. Something snapped inside of me..It's like I slowly started waking up. Quick and Easy Beef Stew

Quick and Easy Beef Stew 
Ingredients
about 2 pounds beef cut into cubes (i cut mine small bc my kids don't like big chunks of meat)
2 cans mushrooms with juice
5 potatoes peeled and cubed
1 large can of green beans with juice
1 large can of diced tomatoes
1 can water (i use the tomato can)
1 onion chopped
1 package of onion soup mix
3/4 cup of pearl barley
small baby carrots chopped
salt n pepper to taste
about 2 tsp basil
Directions
Mix all in a roasting pan, cover and cook at 350 for about 2-3 hours stirring occasionally, if it looks dry add more water
we serve it with homemade bread and side salad

"The picture on the right was a month after I had a mild stroke. We knew we had to do something to get me healthier, but I have a hard time with diets. I refuse to feel deprived. Thyroid disorders can slow down or speed up metabolism by disrupting the production of thyroid hormones. When hormone levels become too low or too high, you may experience a wide range of symptoms.

An unexplained change in weight is one of the most common signs of a thyroid disorder. Weight gain may signal low levels of thyroid hormones, a condition called hypothyroidism. If you are diagnosed with hypothyroidism, your healthcare provider will most likely prescribe thyroid hormones in the form of a pill. This usually leads to noticeable improvements within a couple of weeks. Long-term treatment can result in more energy, lower cholesterol levels, and gradual weight loss. Most people with hypothyroidism will need to take thyroid hormones for the rest of their lives.

Other weight loss tips to consider include:

• Meeting with your healthcare provider to ensure thyroid medication is properly regulated
• Staying hydrated by drinking plenty of water
• Increasing fiber by eating more fruits, vegetables, nuts, seeds, and whole grains
• Removing tempting foods from your home, desk drawer, or locker
• Finding activities to replace eating when you are bored
• Eating from a plate or bowl, while seated at a table

The key to weight loss and long-standing weight management is to set realistic weight-loss goals. Weight loss of one-half a pound to two pounds a week is considered safe and healthy. Also, focus on making long-term lifestyle changes that will be lasting and can be followed for the rest of your life. Losing weight is ultimately about promoting positive health and decreasing risks for developing chronic conditions. Keep your eye on all of the benefits you will be obtaining through the process of moving towards a healthy weight.

Bacon Wrapped Stuffed Chicken and Smothered Green Beans

Bacon Wrapped Stuffed Chicken and Smothered Green Beans 

Ingredients:

for the chicken you will need: 
boneless skinless chicken breast
2 tablespoons cream cheese for each chicken breast
green onion, Chopped for each as much as you want 
1 piece of bacon for each breast 
fresh spinach

Directions:
Pound out Chicken breast so it is about 1/4" thick. 
Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast, place spinach over cream cheese mixture
Roll Chicken breast up to conceal cream cheese.
Wrap bacon around chicken breast and secure with toothpick. Sprinkle each with salt and pepper 
Place on baking sheet and bake for about 40 minutes at 350.
for the green beans 
I package of green beans (I used the frozen extra fine kind) 
1/2 lb bacon cut into small pieces 
3-4 garlic cloves chopped
1 can mushrooms
1 medium onion diced
1/2 cup slivered almonds
1/2 cup pure maple syrup
1/2 tsp of the following basil, dill, parsley, fennel seeds
Salt and pepper to taste
Fry up bacon, remove and set aside.. On medium heat cook onions in bacon grease until tender, add garlic , cook until fragrant.. Add mushrooms and spices.. Add maple syrup, bacon, and almonds.. Sprinkle w salt and pepper to taste. Grease a baking dish, mix together your frozen green beans and your sauce, bake in oven with lid off at 350 for about 30 min
