Mediterranean Chicken and Eggplant Recipe

Mediterranean Chicken and Eggplant 
Ingredients:
4 Thick Boneless Chicken Breast (or 8 Thin Sliced) Cubed
2 Medium sized Eggplant sliced into rounds (1/2 inch thick)
3 Tbs Olive Oil
1 Large Onion Sliced
1 cup water
1 9oz. can Tomato Paste
2 Tbs Oregano
2 tsp minced garlic
1 4 oz container Feta cheese crumbled.
Salt and Pepper to taste.
Instructions:
Peel and slice eggplant and lie out on paper towels and salt both sides.
Cover eggplant sliced with more paper towels and put a heavy pan on them so they can "sweat" (removes bitterness) for about an hour.
Pre-Heat oven to 400 °
Rinse off eggplant and lightly brush with olive oil and either grill or sauté for a few minutes to just barely soften and transfer to baking dish and set aside.
Take chicken cubes, sliced onion and garlic sauté in fry pan until chicken is no longer pink. Drain off any liquid and then add tomato paste, water, and oregano and bring to a slow boil.
Pour chicken mix over eggplant in baking dish and bake at 400° for 20 minutes
Remove from oven, top with feta, and serve over rice or noodles.

Tarragon Whitefish and Tangy Citrus Slaw Recipe

This meal is less than 150 calories so consider it a snack! And from start to finish takes about 15 minutes!

MAKES 4 SERVINGS
Ingredients:

Whitefish
4 5-6 whitefish fillets
2 tablespoons lemon
1 Tablespoon dried tarragon
1/4 teaspoon garlic powder
1/8 teaspoon sea salt
splash of chicken broth
Slaw:
4 cups shredded red cabbage
2 cups shredded fresh spinach
2 medium apples diced small
1 orange cut into supremes then in half
dried poppy seeds (optional)
1/2 cup apple cider vinegar
2 tablespoon lemon juice
1/4 teaspoon stevia or one small packet
Even though I am big believer in using good fats in your diets, I'm trying to minimize them due to calories. Feel free to add oil to any part of this if you like!
FISH:
1)Rinse and pat fillets dry. Place in a casserole dish and pour lemon juice on top.
2)Add tarragon, garlic a salt to both sides.
3)Cover and refrigerate for 1 hour or more
4)Heat nonstick pan and cook on medium for 3-4 minutes per side. Should it begin to stick add lemon juice from marinade or splash of chicken broth. I do one at a time to manage them, but you can do them all at the same time.
SLAW:
1)Shred slaw, chop apples and combine in a large bowl
2)In a small bowl, add vinegar and lemon juice then incorporate stevia
3)Pour dressing over slaw, sprinkle poppy seed and mix
4)Top with orange slices
A variation to add a bit of fat and more substance is to add 1/4-1/2 cup mayo to the vinegar and 1-2 avocados! YUM!

Tomato sauce 
Mozzarella cheese

Directions
I steamed the cauliflower in the microwave and cooked the pepperoni in a pan to crisp them. Then I combined all ingredients and baked in the oven until cheese was melted.

This was so quick & easy, perfect for a Sunday night - serves 4
Approx 250g Penne Pasta (or pasta of your choice)
200g Smoked Salmon
1 Bunch Asparagus, finely sliced
1 tub Red Rock Deli Basil, Pesto & Cashew Dip
Fresh Lemon
Cracked pepper
Parmesan Cheese

Cook pasta to packet instructions
Steam the Asparagus over the same pot as the pasta is cooking
In a large dish mix the Pasta,Smoked Salmon, Asparagus, Basil, Pesto & Cashew Dip
Serve with the Cracked Pepper, Parmesan Cheese and a squeeze of lemon juice.

Cheesy Stuffed Mushrooms (Low Carb!!)

Cheesy Stuffed Mushrooms (Low Carb!!)

Ingredients :
1/2 Stick of butter
1 package of Stuffing Mushrooms (any button type can be used)
3 Heaping tsp Minced Garlic
1/2 cup of Fresh Flat Leaf Parsley (chopped)
5 Green Onions (chopped)
1 Wedge of Brie Cheese (any cheese will work..Brie is Delish!)

Directions:
Pre Heat oven to 170
Wash, dry and remove stems from mushrooms
Melt butter in large frying pan
Add mushrooms and toss to coat in butter for a few minutes lightly browning the mushroom.
Remove and place in baking dish.
Next add the Garlic, Green Onion ,and Parsley mix ti the same fry pan and toss to coat with butter left in the pan.
Quickly remove from heat. and set aside.
Cut Brie into pieces that will fit in your choice of mushroom (remove white rind first)
Pour Parsley/Onion mix on top of mushrooms distributing evenly.
Place in oven at 170 for 20 minutes.
(Timing could be less if using small mushroom)
